For the beans:
• 1 lb dry black beans
• 1 small bell red pepper
• 1 small onion, quartered
• 2 cloves garlic
• 3 bay leaves

For the soup:
• 1 tbsp olive oil
• 1 large onion, minced
• 1/2 cup chopped parsley
• 1 red pepper, minced
• 2 medium carrots, shredded
• 5 cloves garlic, minced
• 1 tbsp red wine vinegar
• 1/4 (2 oz) cup white wine
• 1 tsp cumin
• 1 tsp oregano
• 1 chicken bullion (vegans use vegetable bullion)
• salt and black pepper

Rinse beans and place in a large pot with about 8 cups of water. Cover and bring to a boil, then remove from heat and let the beans sit, covered for one hour. (Or you can let them soak overnight in cold water)

Drain the water, then add 8-10 cups of cold water when ready to cook.

Add bell pepper, garlic, onion and bay leaves to the beans. Bring to a boil andreduce heat to low. Simmer for about an hour, or until tender, stirring occasionally. (Add water if necessary)

Meanwhile, in a large frying pan, heat oil on low. Add chopped vegetables (onion, parsley, carrots, pepper, garlic) season with salt and pepper and saute for about 5 minutes, or until soft.

Add the vegetables to the soup, then add wine, vinegar, cumin, oregano, bullion, salt and pepper and adjust water if too needed. Cover and simmer on low about 15 - 20 minutes. Remove bay leaves, then using an immersion blender, partially blend the soup for about 10 seconds to thicken. If you don't have an immersion blender, put about 3 cups of the soup in a blender, then add it back to the pot. Adjust salt, pepper and cumin to taste.

* Olive oil
* 1/2 onion, finely chopped
* 1 clove of garlic, peeled and finely chopped
* 150g risotto rice
* 75ml white wine
* 750ml warm light vegetable stock
* A bunch of spring onions, thinly sliced
* 150g cooked peeled prawns
* 3 tablespoons low-fat creme fraiche
* A squeeze of lemon
* 1/2 bunch of basil, chopped
* Salt and freshly ground black pepper

Method
1. Heat up a splash of oil and gently fry the onion and garlic until translucent. Add the rice and continue frying for two minutes. Add the wine and continue stirring until the wine is absorbed.

2. Now start to add the stock, ladle by ladle, stirring until the stock is absorbed between each spoonful.
Sophie's Tip

1. There are so many possible variations. Try crab or chicken instead of the prawns, or replace the basil with chives or tarragon.

3. Give the risotto lots of tender loving care, by stirring regularly, and the creamy starch will come out of each grain. Continue like this for 10 to 15 minutes.

4. Add the spring onion to the risotto, continue cooking for five minutes and then add the prawns and creme fraiche.

5. Now this is the important point. You need the rice to be al dente, which means firm-to-bite (not soft and overcooked), so keep tasting it until it is time to take it off the heat (it will probably need another five minutes).

6. Add a squeeze of lemon and stir through the basil. Check the seasoning and then, for the final touch, grate some lemon zest over the top.

I was getting sick of cooking veg food lately. But it's a Hindu holy month, and I really want to respect my wife's religion, so I've been eating a lot of veg as a result and, while I'm a veg sympathizer, I only have so many veg recipes to cook.

Then I made this. And had to stop myself from eating too much, because it's yummy.

It's kind of an ersatz Baked Ziti. Except I used Rotini instead of Ziti. It's got a sauce with mushrooms and red peppers and onions and fresh garlic in it and then motzerella cheese on top.

Oh, but I finally found some non-mutant whole-wheat pasta. See, I tried the stuff they sell in Safeway and it was mutant food. It had all kinds of different weird ingredients like brown rice and sugar and "natural flavorings" and it just tasted awful. This stuff was pretty much all whole-wheat but it tasted just fine. Had I not told Mrs. Wirehead that it was whole-wheat, she wouldn't have noticed. I found it in Trader Joe's.

And, since it's pasta and mostly veg, I paired it with a 2003 Rose from Chateau Julien in Carmel Valley. Which is a fairly (but not totally) dry rose and very much unlike the standard nasty White Zinfandel that has tainted all rose wines. I'm so a sucker for dry rose wines.

So I had four helpings of pasta and two glasses of wine... ehrm... it's OK. I've been actually scaring myself because I'm eating 800 calories less than I need to maintain my weight. Largely because I'm sick of veg.

Oh, strobist details. Cable from the G7's hotshoe to my 622 Pro set at 1/128th power. To the side and zoomed in as far as it'll go so I had a nice hot spot of light. And my hand was hurting because I was handholding the flash.

But the food... yum. It hit the spot.











Spaghetti w/Quick Meat Sauce




Spaghetti w/Quick Meat Sauce





Ingredients
1 pound whole-wheat spaghetti*
2 teaspoons extra-virgin olive oil
1 large onion, finely chopped
1 large carrot, finely chopped
1 stalk celery, finely chopped
4 cloves garlic, minced
1 tablespoon Italian seasoning
1 pound lean (90% or leaner) ground beef
1 28-ounce can crushed tomatoes
1/4 cup chopped flat-leaf parsley1/2 teaspoon salt
1/2 cup grated Parmesan cheese

Preparation
1. Bring a large pot of water to a boil. Cook pasta until just tender, 8 to 10
minutes or according to package directions. Drain.

2. Meanwhile, heat oil in a large skillet over medium heat. Add onion, carrot
and celery and cook, stirring occasionally, until the onion is beginning to brown, 5 to 8 minutes.

3. Stir in garlic and Italian seasoning; cook until fragrant, about 30 seconds.
Add beef and cook, stirring and breaking up with a spoon, until no longerpink, 3 to 5 minutes. Increase heat to high. Stir in tomatoes and cook until thickened, 4 to 6 minutes. Stir in parsley and salt.

4. Serve the sauce over the pasta, sprinkled with cheese.

Just to see what would happen i went ahead and put on a small YTF shirt. So get a looksey at the first time Mike Fire has ever been able to squeeze into a small shirt. Notice how the tape skull is all distorted from the battle to be on my body. That's what hot chicks call daily life by the way....the battle to be on my body. Anyway, i am actually going to bed early tonight. I will hopefully be asleep by 10 for the first time in my life that i wasn't sick. My body refuses to let me sleep before 11 no matter how tired it is. Hopefully it will give in tonight because i am fucking spent. I have managed to stay off the scale for almost 2 weeks now. To be honest i dost think i have lost much more weight since then. I am working out so much i think i have most likely gained some muscle. Who knows though. As it stands though i only have 9 more days of the daily picture weight loss deal. Not to worry though to anybody who actually reads my daily hullabaloo. I will still be doing the 365 days thing and i will keep on writing about my shitty ass day on each picture. So merry early christmas to you guys. What can i say? My words are like gold to the people. So anyway, today i had two bars of course. For lunch i had a salad from subway. I went with Amie from work. It was pretty awesome. I dont think the people at subway think i'm very funny though. I always make the dumbest jokes just to be a smart ass and piss them off. They never laugh though. They just look at me like i'm an ass. I guess i am. For dinner though i had a nice lean meal. 210 calories of meatloafey goodness. That's about it though. Night night. I'm bumping some serious BSF right now. It's raining "cats and dogs" now, but it will be cleared at the beach by the time we arrive. After my hair appointment, he invited me to lunch at the country club.
