This delicious, light crepe-like omelet is perfect for any time of day! Switch up the fillings to suit your tastes and pantry items.

The Literal Egg Roll:
Whisk 1 whole egg with up to 1/2 cup egg whites. Add 1/4 cup finely chopped spinach and herbs and spices of your choice (suggestions below) to the egg mixture before pouring into a large heated, greased skillet - be sure to choose one big enough to give you a very thin egg layer. Tilt the pan to fully coat it, cooking until mostly cooked on top. Flip over once it has mostly set and cook for an additional 10-15 seconds before transferring to a plate. Add fillings of your choice and roll up like a burrito (though you may not want to eat it with your hands!)

Filling Suggestions:
(1) Mix lemon peel, dill, basil, and pepper into the egg mixture; For the filling, spread the finished egg with soft cheese (ie 1 laughing cow wedge) and top with diced red onion + cucumber.
(2) Add oregano, basil and garlic powder to the egg mixture. For the filling, saute a scant 1/4C mushrooms & a couple tablespoons sliced onion, 5-10 minutes until soft and lightly brown, then toss with 2 teaspoons of feta & 4 teaspoons diced sundried tomatoes.
